Use sparingly

Advice on the web says use 1:1 as compared to cornstarch. However, Xanthan gum is entirely different from cornstarch. It works at any temperature and if you use too much, the result is slimy and it masks flavors. It also requires use of a whisk or hand blender. I use it to make salad dressings and I need a very small amount to thicken the cold dressing. For hot sauces, cornstarch in larger amounts thickens and brings out the flavors. I would never use this gum to thicken sauces that are created by a heating process, cornstarch is easier and tastes better.

A Must Have For Your Pantry!!

I am using this to make homemade frozen coffee drinks and so far, it's been perfect. You don't need much, to thicken beverages, ice cream or other desserts. It's tasteless and just gives the richness to a beverage. I haven't tried it yet to thicken soup but I plan on trying it for chowder, especially milk based. It will probably be better than flour or corn starch since it doesn't add any taste. I am very pleased with the price and shelf life and recommend this product.
